Sexy Fish Dubai has named George Gkoregias as its new Executive Chef. He joins in October 2026 and will lead the kitchen at the restaurant’s home on Level 11 of Innovation One in DIFC.
Gkoregias brings more than 15 years of experience, with a background in Japanese-inspired cuisine, Michelin-starred kitchens and high-profile restaurant openings across Europe.
Most Recent Role
He arrives from Kioku by Endo at Raffles London at The OWO, where he was Executive Chef. There he led the restaurant through its pre-opening and launch, developing the opening menus and recruiting and training the kitchen brigade before the doors opened.
Career So Far
Before that, Gkoregias spent almost a decade with ROKA in London, rising from Senior Chef de Partie to Head Chef. He ran the kitchens at ROKA Canary Wharf and ROKA Mayfair, and oversaw the restaurant’s summer residency at Hotel Arts Barcelona in 2023.
His career began in Athens, where he trained at Le Monde before joining the Michelin-starred Spondi. He then moved to Mykonos to cook at Santa Marina Resort & Villas, a Luxury Collection Hotel, before relocating to London to work at the Michelin-starred Pied à Terre and, later, ROKA.
What It Means for Sexy Fish
The appointment pairs his Japanese-inspired experience with the restaurant’s position as one of DIFC’s established dining and nightlife destinations. No menu changes have been announced alongside the news.
