Th8 Palm Dubai Beach Resort, Vignette Collection, By IHG has introduced Sea to Swing, a full-day experience that combines morning fishing, beach club access and evening Greek dining. The programme runs from sunrise to sunset every Tuesday to Sunday.

The experience starts with a fishing trip on Dubai’s waters, followed by time at Fluid Pool & Beach Club, and ends with dinner at Bakalis Greek Grill Taverna on Palm Jumeirah.

The day begins at 6:30am with a three-hour fishing excursion. Th8 has partnered with Blue Safari for guided trips into Dubai’s coastal waters. Guests fish during the morning session, and their catch can be prepared for the evening meal.

After the fishing trip, guests return to Th8 Palm Dubai Beach Resort for the afternoon. Full access to Fluid Pool & Beach Club is included. The beach club features the Food Truck Village with Fluid Food Truck, Burgler and Rohini on Wheels. Pure by Serenity operates an outdoor massage cabana within the beach club area.

Evening service moves to Bakalis Greek Grill Taverna at the resort. The restaurant sits on the beach with views across Palm Jumeirah. Culinary Director Chef Faisal Albaradie has created the Taste of Bakalis menu for the experience.

Chef Albaradie explains the concept: “Born from the lineage of Greek coastal kitchens, our menu is a tribute to the raw beauty of the Mediterranean. Here, the ‘Sea to Swing’ journey unfolds, – where the morning’s freshest catch meets the elemental heat of our signature ‘Swing Grill’ fired up by olive wood. It is a celebration of authentic flavours and ancestral secrets, captured in the scent of smoke and the spirit of the Aegean. From the deep blue to the open flame, this is Greek Grill Taverna experience at its purest.”

Sea to Swing at Th8 Palm Dubai Beach Resort takes guests from morning fishing through beach club time to sunset dining on the shore.
