    AMARU Restaurant & Lounge at Souk Madinat Jumeirah has introduced Chef’s Journey, an immersive tasting experience built around the bold flavours, live-fire cooking and culinary heritage of Latin America. Served daily, it offers four menus, each giving a different view of AMARU’s cooking: the signature AMARU Journey Menu, the plant-forward Vegetarian Journey Menu, the compact Chef’s Selection and the premium Chef’s Signature.

    The AMARU Journey Menu

    The meal opens with AMARU’s signature Guac-Guac, followed by a run of starters that includes the Arepa Reina Pepiada, Smoked Tuna Tiradito and Beef Empanada. Next comes the Truffle Corn Salad, then the restaurant’s much-praised 36-Hour Asado Negro, a Venezuelan-inspired short rib that shows off the craft of cooking over fire. Eggplant a la Brasa and Yucas follow, before a warm Dulce de Leche Fondante closes the meal.

    The AMARU Journey Menu is AED 350 per person, with a minimum of two guests.

    The Vegetarian Journey Menu

    Priced at AED 300 per person (minimum two guests), the vegetarian menu is just as full of character. It features Shiitake Anticucho, Harvest Empanada, Roasted Cauliflower and Eggplant a la Brasa, and ends with AMARU’s signature churros served with dulce de leche and dark chocolate.

    Chef’s Selection and Chef’s Signature

    For a more elevated meal, two further tasting menus are available.

    The Chef’s Selection, at AED 450 per person, is a curated sequence of signature dishes: Octopus Yuzu Ceviche, Tuna Tostada, Coxinha & Foie, Slow Cooked Beef Taco, Grilled Octopus and Chops del Altiplano. It serves as a refined introduction to AMARU’s style.

    The Chef’s Signature, at AED 950 per person, is the top-tier option. It brings together the kitchen’s finest creations, including Pacific Gold Ceviche, King Crab, Scallops del Fin del Mundo, Wagyu Anticucho, Patagonian Ancestral and Chargrilled Rib Eye, and finishes with both AMARU Churros and Dulce de Leche Fondante.

    More Than a Meal

    The food is only part of the evening. AMARU’s signature 360° projection mapping, visuals inspired by Latin American mythology, live DJ sets and entertainment combine to create a lively, multi-sensory atmosphere. Chef’s Journey is as much an invitation to experience the flavours, traditions and spirit of Latin America as it is a tasting menu.
