Bonci has opened a full sit-down Italian restaurant at Chef’s Society, City Centre Mirdif, built around Gabriele Bonci’s famed Roman-style pizza al taglio. Brought to the UAE by Culinary Loft Restaurant LLC, the Dubai outpost goes well beyond pizza, rounding out the menu with fresh pasta, Italian mains, breakfast, starters, salads and desserts.
Two Ways to Order Pizza
Bonci Dubai serves its pizza in two distinct formats. Diners seated in the restaurant can order from a set menu of pizzas made fresh to size, while the counter keeps the classic Roman al taglio ritual alive — large rectangular trays of pizza on display, cut with scissors, weighed and priced by the slice for guests eating in or taking away.
The Dough Is the Difference
What separates Bonci from the rest starts before the toppings. Every base begins with a proprietary flour blend and a 48-hour fermentation, producing a crust that’s airy inside, crisp outside, and carries far more depth of flavour than a standard dough. It’s a process built entirely on patience, technique and ingredient quality.
Guests can watch it all come together at the live pizza station, where the pizzaiolo stretches and shapes the dough in full view, set against a colourful display of freshly baked al taglio trays.
